Aubergine Parmigiana


This dish is my favourite vegetarian dish, it is simple but has to be made with care and good quality ingredients which it is here. layers of aubergine are cooked well, combine this with a lovingly made tomato sauce and good quality parmesan, it is perfect as a midweek main dish serve it with warm bread and a crisp green salad. Nothing really beats it, and you could also use it as a side dish to many grilled meat or fish dishes.

Ingredients: Aubergine (68%), tinned tomatoes, tomato puree, red onion, carrot, garlic, sugar, bay leaf, salt & pepper, fresh thyme, sherry vinegar, sugar, parmesan cheese (milk).
